Stephen completed his PhD whilst working for Unilever in the UK. He is a director of three companies, including his own consultancy company, a cake/biscuit producer and a distillery. He has been involved in waste-water treatment for over 30 years, and has over 10 papers in reputed journals, he has also presented papers at conferences including the World Spirits Conference in Glasgow and Water Treatment at Tehran University in Iran. He also serves on the editorial board of the International Journal of Dairy Technology.

Anubhav Pratap Singh

Hailing from Sultanpur (Uttar Pradesh) India, Dr. Anubhav Pratap Singh is a 2011 Chemical Engineering (dual degree – BTech & MTech) graduate of Indian Institute of Technology (IIT), Kharagpur (WB), India and holds a Doctor of Philosophy (PhD) degree in Food Science from McGill University, Montreal, Canada for developing & characterizing the novel reciprocating agitation thermal processing technology in the laboratories of world renowned food processing expert Dr. Hosahalli Ramaswamy. After his PhD, Dr. Pratap Singh worked with Enwave Inc., microwave dehydration company, assisting with their operations in Eastern Canada. In 2016, Dr. Pratap Singh received the Banting Postdoctoral Fellowship and joined the team of renowned table salt fortification expert Dr. Levente Diosady at University of Toronto. Iron fortified table salt developed in this laboratory is being successfully distributed amongst people living below poverty line in my native province in Uttar Pradesh, India under the Mukhyamantri Namak Vitran Yojna. In 2017,  Dr. Anubhav Pratap Singh joined the Faculty of Land and Food Systems, UBC as an Assistant Professor in the Food Nutrition and Health Program. At UBC, Dr. Pratap Singh has established a CFI-funded Advanced Non-thermal Food Processing (ANT-FP) laboratory and leads a NSERC-Discovery and industry funded research program in novel food processing. Dr. Pratap Singh’s research group primarily focusses on 3 major areas of food science technology: 1. Developing novel processing technologies for preservation of food. 2. Development of encapsulation technologies for food fortification.3. Exploring alternative (non-meat) sources of proteins for improving food sustainability.

Efterpi Christaki

Professor Efterpi Christaki, veterinarian, nutritionist, graduated from the Faculty of Veterinary Medicine, Aristotle University of Thessaloniki, where she completed her Ph.D. in 1991. She was elected Professor in 2012. Since 2015 she is the Head of the Department of Animal Production, Ichthyology, Ecology and Protection of the Environment. Her research interests include nutrition, feed additives such as probiotics, prebiotics, aromatic plants and quality of animal feeds, nutritive value of feedstuffs, functional foods, macro- and micro-algae, vitamins, trace elements. She has more than 180 publications (books, research articles, reviews, congress presentations) and about 2000 citations. She is reviewer and member of several editorial boards in peer-reviewed journals, evaluator of national and international projects and member of scientific committees.

Joana S. Amaral

Joana S. Amaral has a degree in Pharmaceutical Sciences and a PhD in Nutrition and Food Chemistry by the University of Porto (Portugal). She currently is an auxiliary Professor in the Polytechnic Institute of Bragança, Portugal and a research integrated-member at CIMO (Mountain Research Centre). She was a research integrated-member at the Associated Laboratory REQUIMTE from 2006-2017, being currently a collaborator member. She is Editor/co-editor of 5 books/proceedings, author/co-author of 11 book chapters in international books, author/co-author of 50 publications in international journals indexed to ISI Web of knowledge, 21 proceedings in national and international congresses, 5 publications in national journals, 64 communications in international congresses and 61 in national congresses.

Iris Edith Peralta

Iris Edith Peralta is an Engineer Agronomist, National University of Cuyo, Mendoza, Argentina, she has completed her Magister Scientiae and PhD at the University of Wisconsin-Madison, United State, and postdoctoral studies at KEW Gardens & Museum of Natural History in London, England. Currently is the Main Professor of Agricultural Botany at the National University of Cuyo and CONICET Researcher. Her research has focused on the diversity of native and cultivated species, and more recently dedicated to the rescue and recovery of traditional varieties of horticultural crops, mainly tomato, and carries out improvement of new cultivars by their sensory and beneficial health qualities.

Farid Menaa

Dr. Farid Menaa is an inter- and multi-disciplinary professional with worldwide reputation. He has three international post-doctoral terms in Oncology, Dermatology, and Hematology; MBA Entrepreneurship and MD candidate. During his ongoing career, he has mainly contributed to the identification and functions of new human disease-causing genes and variants, formulated natural products for anti-aging and developed innovative theranostic strategies against cancers, cardiovascular diseases, diabetes, obesity and infectious diseases. He has more than 10 years’ experiences either in the academic, hospitals or industrial sectors. As Chief Scientific Officer and Vice-President R&D at Fluorotronics, Inc. he actively participated in the development of the disruptive “Carbon-Fluorine Spectroscopy”. Dr. Menaa collaborates with various organizations worldwide. He is a member of several prestigious medical and scientific organizations and editorial boards in the field of medicine, science, technology and business, including in the nano-segment. He has authored more than 100 articles including research and review articles, books, book chapters, textbooks, proceedings, and has participated to over 200 scientific international events including as co-organizer, keynote speaker, chairman. Dr. Menaa’s worldwide collaborations, holistic point of view and strong expertise in various fields led him to prevent, implement early diagnosis, and develop efficient and safer therapy.

Ahmet Yemenicioglu

He is still working in IYTE as a full-time professor and has published more than 50 papers in reputed international journals, books and encyclopedias.

Mohamed Eddouks

Mohamed Eddouks is Professor at Moulay Ismail University, Faculty of Sciences and Techniques Errachidia, Morocco. He is a researcher in Physiology and Pharmacology with a Master Degree in Metabolic and Molecular Endocrinology from University of Paris 6, a specialized certificate in Endocrine Pharmacology from University of Paris 7 and PhD degrees in Physiology and Pharmacology from University of Liege, Belgium and Sidi Mohammed Ben Abdellah University, Fez, Morocco. After his post-doctoral fellowship at Department of Physiology, Faculty of Medicine of Montreal, Canada, he is working for the last 20 years on medicinal plants. His research focuses on ethnobiological as well as pharmacological issues in the use of Moroccan medicinal plants for the treatment of diabetes mellitus, obesity and hypertension.  His contribution to this field includes four international books, 5 special issues in Evidence-Based Complementary and Alternative Medicine and more than 100 indexed peer-reviewed articles and 20 book chapters of international repute. He served as Guest Editor and Member of Editorial Board of several international journals. He has been honored with the first Prize of Scientific Research in 2008 by the Moroccan Association of Research and Development and the first Prize of the Federation of Arab Scientific Councils in 2016. He has been classified among the best third Moroccan researchers in the field of Life Sciences and Pharmaceutical Sciences by the National Center of Scientific Research and Technology, Morocco for his scientific contribution. He has been the founding Dean of Polydisciplinary Faculty of Errachidia from 2008 to 2012.

Glaucio Dire Feliciano

Professor Glaucio Dire Feliciano (D.Sc.) has a degree in Biological Sciences from the Federal Rural University of Rio de Janeiro (UFRRJ / 1999), a master's degree in Human Biology and Experimental (Morphology) from the University of Rio de Janeiro (UERJ / 2001) and doctorate in Biology (Nuclear Biosciences) by the University of the State of Rio de Janeiro (UERJ / 2004). He completed his postdoctoral degree in Experimental Pathology from the State University of Rio de Janeiro (UERJ / 2005). He is currently a research professor in the area of Neuropharmacology and Neurochemistry of the Foundation State University Center of the West Zone (UEZO), where he is responsible for research on the Study of the biological effects of natural products with investigative interest in the Brazilian single health system (SUS) , which is developed in the Laboratory of Chemical and Biological Analysis (LAQB). This research professor has experience in the areas of Biochemistry, Biophysics, Morphology and Neuroscience, mainly in the following subjects: Radiolabeling, Biological Effects, Medication Interaction, Histology, Physiology, Pathology, Metabolism, Toxicology and Neurosciences. Member of the American Association for Science and Technology.
